Virgin Honey
The Barbados Food & Wine and Rum Festival takes place November 18-21, 2011.
2 oz fresh-squeezed lemon juice
8 sprigs cilantro
12 cubes diced cucumber
1 oz honey
2 oz passion fruit juice
2 oz Mount Gay Silver rum
Apple heart garnish
Muddle the lemon juice, cilantro, cucumber and honey at the bottom of a cocktail shaker. Add the passion fruit juice and shake vigorously. Stir in the rum. Fine strain into a martini glass and garnish with an apple heart (you need a little shaped corer to pull this off).
